If using fresh corn, blanch for 1 minute and drain. Frozen corn can be thawed and used directly.
In a bowl, mix mayonnaise with Chaat Masala, lime juice, salt, and pepper.
Add corn, red onion, and capsicum to the mayo mixture. Toss well to coat.
Stir in fresh coriander leaves and chilli flakes if using.
Divide into serving bowls and garnish with extra coriander. Best served cold.
