Rinse toor dal and add to pot with 5 cups water and turmeric. Boil until soft (20-25 mins).
Add cubed vegetables to the cooking dal and cook for 8-10 mins until tender.
Heat oil in a separate pan. Fry sliced onion until golden (3 mins).
Add garlic and green chillies. Cook for 1 minute.
Sprinkle Dal Tadka Masala and let it sizzle for 15 seconds.
Pour the tadka into the cooked dal and vegetables. Mix well.
Simmer for 3-5 minutes.
Add lemon juice, adjust salt, and garnish with fresh coriander.
